Healthy You Check In

First I just want to thank everyone for reading my blog and leaving comments. You don't know how much those comments help!!

Well, this week has been a little rough. It all started last Friday when I had to make cupcakes for my daughter's birthday. Then Saturday was her party, we were at the mall and I was so busy tending to the kids that I ended up just shoving in a piece of leftover pizza from the party. Sunday was another off day. We had a potluck at church and I had been so busy the night before and that morning that I didn't have the chance to prepare myself something healthy to take along. So when I weighed in yesterday, I really was shocked to see that I lost, even if it was only 0.6 lbs. I'll take it! I did good throughout the day yesterday... then we had yet another birthday party for my daughter last night and I did eat some chips/salsa and a piece of cake. I didn't track that but I figure I'll just assume that all of my flex points for the week are gone.

So anyways, today is a new day! I've already been to the gym this morning and did an hour of cardio. I started the Couch to 5K program last Thursday and I did the second workout of week 1 today followed by some time on the ellipitcal (love that machine!!).

One of my original goals was to be out of the 250s by the end of January. I've decided to extend the deadline to Feb. 4th (my next official weigh in). Only 3.4 lbs to go!

My goals for this week are:
1. Eat all my servings of fruit and veggies
2. Earn 32 activity points
3. Plan meals and cook ahead
4. Get my application in for Nursing at Mount Royal

I have 11 APs so far this week so I'm well on my way. I also cooked up some yummy stuff in the crock pot yesterday and have the leftovers put away for the week. It's delish!!

Salsa Crockpot Chicken
1 can condensed low fat Campbell's Cream of Chicken Soup
1 cup (approx) salsa
16 oz boneless, skinless chicken breast

Toss it all into the crockpot and cook on low for approx. 6-8 hours or high for 4 hours. You could also add in some extra veggies but make sure you add the points/calories for them.

Makes 4 servings, 5 points each

That recipe sounds yummy! AND easy ( best part) lol. Good luck this next week with reaching all your goals! I am sure you will reach that 3.4lbs gone in no time!

The recipe does sound really good and I can't wait to try it!

I just want to warn you (and you might already know) - the salsa and soup have tons of sodium in them so make sure you don't eat this night before WI or you could falsely retain b/c of all that sodium. :)

Good luck w/ your goal to be under 250 lbs, your plan sounds great so you should have no trouble!

Congrats on your loss even through a rough week. I'm very interested in the couch to 5k program ... I have it on my list of to-dos to get new running shoes and then try it myself.

The recipe looks good. Unfortunately my crock pot broke last Tuesday, so I have to buy a new one.

congrats on your loss!! that is very exciting.

I make a similar version of the salsa chicken. I cut out a lot by not using anything but the salsa and chicken. it has enough flavor without needing anything else. then at the end I will just top it with a small piece of pepperjack cheese. yummy!

Also, it sounds like you did quite well this week considering the parties and socializing and all! Good job.

I've looked at the couch to 5K business also...seems very interesting. Keep us up to date on your progress, ok?

Thanks for stopping by my blog, I, too, appreciate the support! I've never tried using a blog support network before, and I think it could be just the ticket:-) Your chicken sounds yummy, but yeah to the sodium...

I've made baked salsa fish before that was superb. It was insanely easy too, I think I found the recipe on Epicurious. It was something like top raw fish with salsa and cheese, bake 15-20 minutes.

Recipe sounds delicious! I might try it soon. I also had a bad week with extra food and getting off program, but I am back OP and plan on doing better. Congrads on the loss!!!

Also, I don't think you should be to hard on yourself b/c you kick butt with AP's.

Birthday parties seem to come in waves. You did awesome. Anytime I can find a quick and easy recipe, it goes on our list of things to try. I have all these ingredients. Yippee, dinner is going to be easy tomorrow!

The Couch to 5K is a great way to start running. What's really nice is that you can repeat days if you feel it's too overwhelming to continue. Taken at your own pace is just as effective as getting the days in on a regimented schedule. For me that was essential at the start of getting into running again. I used a different program, the American Running Association 12 week Walk to Run, but it's very similar to the Cto5K! It's exciting isn't it!

just wanted to let you know that I tried your crockpot recipe and loved it! My hubby loved it too, which is rare. (he loves food, just not what I cook!!) Thanks for sharing and great job on your weight loss!
